Tofu and Spinach Soup

1 8-oz. package fresh spinach, rinsed and chopped 1 8-oz. package firm Mori-nu tofu, cut in large dices 2 Tbsp. peanut oil 1/2 tsp. sea salt 2 1/2 c. water 2 Tbsp. lite soy sauce 1 tsp. toasted sesame oil 1. Sauté spinach in peanut oil until tender. Meanwhile, bring water to a boil, adding soy sauce and salt. 2. Add the sautéed spinach and the tofu. Return to a boil and add sesame oil. Serve hot. Sausage and Vegetable Soup

1 package vegan sausage, such as "Gimme Lean" 1 c. onions, chopped 2 Tbsp. olive oil 4 c. water 2 Tbsp. chicken-style seasoning 1 26-oz. jar chunky vegetable spaghetti sauce 2 c. uncooked whole wheat rotini pasta 2 large carrots, thinly sliced 1 med. summer squash, thinly sliced 1 tsp. onion powder 1 tsp. garlic powder 1/4 tsp. cayenne pepper, opt. 1 tsp. Italian seasoning 1/4 c. vegan Parmesan alternative 1. Sauté onions and sausage burger in olive oil until onions are tender. 2. In a medium saucepan, combine remaining ingredients except pasta and Parmesan. Bring to a boil and simmer until vegetables are crisp- tender. Add pasta and simmer for 10 - 15 minutes more, or until pasta is done. 3. Add sausage mixture and simmer, covered, for a few more minutes. Spicy Black-eyed Pea and Tomato Soup

1 c. black-eyed peas, frozen in water enough to cover 3 c. water 2 red onions, chopped 2 garlic cloves, minced 2 banana peppers, chopped 1 14-oz. can stewed tomatoes, mashed 1/2 tsp. crushed red pepper sea salt to taste 1. Bring frozen black-eyed peas to a boil. Cover and let stand 1 hour. Cook beans without salt until tender, about 1 1/2 hours. Drain. 2. In a medium saucepan, combine all ingredients, bring to a boil and simmer until vegetables are tender. This is nice served with my Thyme Corn Bread. Paula & Curtis Eakins Copyright 3ABN 2011. Soybean Vegetable Soup

1 15-oz. can soybeans, rinsed and drained 3 c. water 3 Tbsp. chicken-style seasoning 1 med. onion, chopped 2 c. carrots, sliced 2 c. fresh tomatoes, diced 2 c. broccoli florets 1 tsp. sea salt, opt. 1 tsp. garlic powder 1 tsp. onion powder 2 Tbsp. sweet basil 1/4 tsp. cayenne pepper, opt. 1. In a medium saucepan, bring water , soybeans and chicken-style seasoning to a boil. Add onions, carrots and tomatoes. 2. Add broccoli and seasonings, adding salt to taste. Ife's Taco Soup

3 c. water 2 c. dark red kidney beans, rinsed and drained 2 c. pinto beans, rinsed and drained 2 c. red beans, rinsed and drained 2 c. diced tomatoes 1/2 green pepper, chopped 1 container mock beef crumbles, such as Boca crumbles 3 Tbsp. beef-style seasoning 1 package taco seasoning 1 tsp. fresh chopped cilantro 1 c. salsa 2 c. tortilla chips, crushed 1/2 c. soy sour cream 1. In a medium saucepan, bring water , beans, mock beef crumbles, tomatoes, green pepper, beef-style seasoning and taco seasoning to a boil. Cover and simmer until green pepper is cooked. 2.
