Savoury Pinwheels

Ingredients: 2 medium to large potatoes 1 egg 2 sheets ready rolled puff pastry thawed 3 Tbls milk 1 heaped cup grated cheese 1 Tbl flour 1 spring onion 2 slices of bacon cooked and finely chopped Salt and Pepper


First peel the potatoes and boil them until they are cooked. Drain them and set aside to cool for about 20 minutes. Mash them lightly, add the egg, ¼ tsp salt and some pepper and mash until the egg is all mashed together with the potato. Then add the cheese, the flour, the chopped bacon and the spring onion and stir it all together. This is the filling and it's ready for the assembly step. Put half the filling mixture on a sheet of pastry and spread it evenly over all the sheet except for a strip 2cm wide along one edge. Brush this strip with milk, then roll up the pastry and filling from the side furtherest from the milk-brushed strip towards it. Repeat this with the other sheet and the other half of the filling. Then turn on your oven to 180°c and get out a baking tray. Either lightly butter it or cover it with baking paper. When the oven is up to heat, cut the rolls of pastry and filling into slices about 1cm thick. Bake for 20 mins. Leave to cool for 15 minutes before you try them or you'll burn your tongue!
