The establishment

Grasse Institute of Perfumery is located just five minutes from the historical town centre. We welcome you to our establishment situated in a provençal style house, built in the early 20th Century. You will find an ambiance which is both warm and professional. You will have at your disposal a large classroom including an application laboratory (perfumer's organ and application kitchen) and a collection of more than 500 raw materials. Our lecturers are all confirmed perfumers/ flavourist from the prestigious companies such as Givaudan, IFF, Mane, Robertet...

The course

During the course we will present the art of chocolate and coffee making for a fun and informative experience that will forever change the way you think about taste and smell. Program : Every chocolate lover should learn the knowledge of coffee to enjoy this daily pleasure. This workshop, led by a flavorist, will help you to discover the subtle smell and taste of these two wonderful products. From the coffee seed to a great-tasting cup of shade-grown coffee, from the cocoa bean to chocolate's subtle flavors, come and share the experience of our experts. You will also discover all the subtle nuances and distinct odours that different blends exude and the different way to extract and to transform the flavor. The course includes many practical exercises of olfaction and taste.

Who whe are

Created in 2002 by Prodarom, the French Association of Fragrance Manufacturers, the aim of our establishment is to train student perfumers. Equally it opens up the opportunity to those passionate about the world of fragrances or flavors to discover or to improve the professionnal techniques of the industry.

The sessions are held one Friday per month from May to September from 9am to 5pm (lunch included).

Organisation

The teacher : Miss Marie-Laure BETTENFELD, Flavorist

Miss BETTENFELD has a PhD in Food Science. Teacher in flavors and food applications, she has over 25 years experience in the field of food ingredients, including a large part in Mane.
