an InTroduCTIon To WareWashIng

Food service warewashing is the method by which dishes, glasses, flatware, pots and pans, etc. are cleaned by an automated process that employs hot water, motion and detergent. The facility's automated warewasher is often its most expensive piece of equipment and, ironically, is usually operated by the least trained employees. An automated warewasher contains seven key components: 1. Tank containing a detergent solution 2. Hood to contain wash and rinse action 3. Pumping and piping system that sprays the detergent solution over the ware 4. Rinse system that receives and sprays the final rinse over the ware 5. Electrical system to regulate wash and rinse action 6. Heating system to maintain wash solution temperature 7. Method by which the ware is conveyed through the system Despite the differences in purpose and design, all warewashing equipment shares three essential requirements: 1. Hot water in sufficient quantity and duration to ensure efficient cleaning and regulatory (NSF) compliance 2. Detergent which works in concert with hot water for sanitation purposes and assists in removing food particles. This is known as "chemical action" 3. Sufficient cycle time and proper volume and velocity of water to ensure cleanliness and meet rinsing regulatory requirements

WareWashIng Types InClude:

Door-Type Machines: designed for small to medium size operations serving 50 to 100 people per meal. They can wash 810 to 1350 dishes per hour. Door-Type washers are equipped with revolving spray arms above and below the dishes. They have automatically timed wash, dwell and rinse cycles and doors slide upward for loading. For energy savings, chemical sanitizing rinse models are recommended over high temperature rinse models. Glass Washers are Door-Type machines which are ideal for bars and bistros because they double as small warewashers. Rack Conveyor Washers: move racked dishes either by a chain or pawl. Pawl action uses a single rod to pull racks through. These units come in one-tank models for medium sized operations (serving 150 people per meal), and two-tank models for high volume operations (where space often restricts the use of a big belt-conveyor machine). Rack conveyors can handle 4500 to 5624 dishes per hour. The dish rack is conveyed through a spray pattern directed from upper and lower stationary spray arms at a prescribed GPM flow rate. After the rack has passed through the wash spray, it moves on to activate the fresh-water final rinse. Flight-Type (Rackless Conveyor) Washers: large capacity Rackless Conveyors are also called Belt Conveyors and Flight-Type machines. They are manufactured for high volume operations catering to more than 1000 people per meal (washing 6750 to 20,000 dishes per hour). The belt conveyors have adjustable speeds and are ideally suited for cafeteriatype operations with heavy tray traffic. Carousel (Circular Conveyor) Systems: offers the most complete, customized machine for the scullery. Integral scrapping, loading and unloading stations provide the space for high-volume applications while allowing flexibility of labor for non-peak times. Tray Accumulators: specifically designed to convey trays either on a conventional flat belt conveyor or as "Tray Accumulators" which use the same amount of space as a flat belt conveyor system, yet handle five times as many trays by utilizing the vertical space above the belt. Tray Accumulators are customizable to fit the space requirements of any operation. Pot, Pan And Utensil Washers: kitchen workhorses, tailor-made for the messy, bulky ware it is designed to clean. Special features offer increased clearance and powerful wash patterns via revolving wash arms. Stainless steel jets spray turbulence to penetrate baked on food and grease and soften food residue. A combination of high pressure and hot water effectively sanitizes all types of ware, including sheet pans and mixing bowls.

WareWashIng basICs

There are numerous variables to consider when selecting the right equipment for your dishwashing area:

Machine Ratings A dishwasher's rating is the number of full dish racks it can wash per hour, or, in the case of Rackless Conveyors, the number of dishes which can be washed per hour. The machine's rating is essential in determining the type and size dishwasher that will be appropriate for your operation. A dish rack is usually about 20" × 20" and can hold roughly 18 dinner plates or 25 to 36 glasses. Capacity will vary based on the size of the items being washed. Specially configured racks are available to accommodate bowls, flatware, etc. Pumps and Motors A warewasher's pump and motor may be thought of as the machine's heart and muscle. The pump is measured by its capacity in gallons per minute (GPM). The motor is rated by its horsepower (HP). Together, the pump and motor work to provide adequate water volume and pressure to ensure proper cleaning and regulatory compliance. heating Equipment Automatic warewashers contain water heaters that maintain the proper water temperature in the unit's tank. These heaters use either electricity, steam or gas. As a general rule, heaters maintain a tank temperature of 160°F to ensure sanitation. Hot water sanitizing warewashing machines use a booster heater to raise the incoming, general purpose hot water to at least 180°F for the final sanitizing rinse cycle. Rinsing The NSF requires an established amount of heat content to ensure sanitization. The water pressure for this cycle must be between 15 to 25 PSI. Most final rinse systems are controlled with an electric valve known as the "solenoid." Water pressure is measured by a pressure gauge and regulated by a pressure reducing valve.

Proper sanitation requires thorough removal of all food particles and other residue to prevent bacterial growth. STERO warewashers meet the challenge every step of the way. All of our products carry the National Sanitation Foundation (NSF) mark and have been tested and certified by NSF to NSF/ANSI (American National Standards Institute) Standard #3--Commercial Warewashing Equipment. NSF issues strict criteria to ensure that warewashing equipment complies with FDA Hazard Analysis and Critical Control Point (HACCP) regulations. To carry the NSF mark, STERO equipment must undergo a rigorous, third-party certification process which tests the following: performance, design quality, materials, soil removal, sanitation efficacy, accuracy of thermometers, thermostats and pressure gauges.

Like any other piece of equipment, an automated warewasher will function best when installed, operated and maintained properly. Below are some of the key considerations to ensure your warewasher maintains optimum efficiency, from installation to operation.

Create An Integrated System Establish the flow of the room by identifying the path that soiled ware takes into the scullery and the exit points for the clean ware. Select the appropriate piece of equipment that possesses the mechanical productivity to match the anticipated volume of ware.

Position the equipment in the room at the strategic location that conforms to the proper flow from soiled to clean. Create dedicated clean and soiled areas to match the flow and minimize the potential for cross-contamination. Utilize peripheral equipment to increase productivity and save labor expense. These include: Pre-rinse sink (preferably with a garbage disposal where local code allows) to provide for initial scraping and rinsing, placed close to the machine to reduce labor. Quick drain, to prevent food and soil from flowing into the wash tank from the soiled table thus reducing detergent usage. Clean dish table (three rack minimum if space allows) to facilitate air-drying and reduce labor. While square footage is an important consideration in laying out the warewashing area, it is not the only factor. It is equally important to design the warewashing area to support sanitation, safety and an efficient workflow. Confirm Available Utilities Once you've selected the machine that best suits your operation, it is crucial that it be properly installed. One of the most important aspects of this is the plumbing. Considerations include ensuring adequate supply lines to support the dishwasher's influent and effluent requirements and the installation of devices to improve operation and efficiency. For example, a hot water pressure regulating valve should be installed to prevent rinse atomization (literally turning the rinse into a fog). A shock arrestor should also be installed in the final rinse line. Shock arrestors provide a cushion against the shock that occurs when the solenoid valve closes. Without it, an audible hammering noise will be heard throughout the kitchen and perhaps the dining room when the solenoid closes on each cycle.

Door-Type

Detergent Usage Detergents are an essential part of the chemical action that removes food particles from the dishware. Dispensing and rinse injection equipment is typically provided by the vendor selected to supply the detergent. It is very important to carefully monitor detergent usage to ensure proper cleaning and cost control. Detergents can be a major expense and issues such as the correct water temperature and food debris left on dishes have an impact on detergent consumption. Detergent formulas are determined by an analysis of water supply and vary depending on the operation's location. If the water supply is determined to be "hard" (high in dissolved minerals, especially calcium and magnesium) this can lead to "liming" in the dishwasher. The detergent supplier can provide de-liming agents to alleviate this problem. foaming Some food products, such as eggs and other dairy items, contain proteins that can cause foaming problems in dishwashers. The detergent supplier can provide formulas designed to eliminate foaming. Thorough pre-scraping of soiled dishware also helps eliminate this problem. venting Venting of the dishwasher removes ambient water vapor from the machine. This aids in the drying process and prevents accumulation of moisture on walls and ceilings. Door-Type machines utilize a draft hood which resides above the unit to capture the vapor. Larger machines often employ vent cowls with duct openings. Duct risers fit into the openings and pull the moisture from each end of the warewasher. Maintaining Your Warewasher Each STERO warewasher comes with detailed instructions for maintenance. This includes STERO's recommendation for a daily cleaning which will extend the life of the product, improve sanitation and increase efficiency. STERO's stainless steel construction requires the use of appropriate cleaning tools and solutions to prevent pitting and rusting. Cleaners containing chlorides and highly abrasive tools, such as wire brushes, should not be used to clean stainless steel components.

continuous-feed or batch-feed. A continuous-feed machine shreds whatever is in it as soon as it is turned on; a batch-feed machine shreds only a certain amount of waste at a time. Their electrical requirements are based on their motor size. Facilities with large waste output may want to consider installing a waste pulper, which can mash paper and styrofoam products, aluminum and cardboard into a watery slurry along with food.

The SGW Glass Washer Series is designed to fit under any standard bar. At only 40 inches, it has a high volume capacity of 37 full (20 × 20) racks or 74 half racks per hour. The entire wash and rinse cycle is 1½ minutes long and uses only 1¾ gallons of water.

These corner loading conveyors make convenient use of the corner of the room to place the machine and create dedicated clean and soiled sides to avoid cross contamination. The scrapper tank does the work of a manual prerinsing operation--but does it faster and better with 185 GPM of re-circulated water, stripping food soil from above and below the ware. Design: Three tank 20" Rack Conveyor, 112"/120" in length with a power scrap, power wash, power rinse, and a sanitizing final rinse. Flexible strip curtains at each end separate the washing, rinsing and final rinse. Three large inspection doors allow easy access to interior of machine. All components are easily accessible for cleaning and maintenance. Construction: Tank and hood are formed from 300 series No. 4 mill finish stainless steel, fully welded with a minimum of bolt together construction. Frame is heavy-duty stainless steel flat stock construction conforming to NSF Standard No. 3. The machine is supported by enclosed stainless steel feet. All internal piping, fittings, risers and manifolds are stainless steel. Power Scrapper: The STERO engineered scrapping pattern utilizes a fixed upper and lower stainless manifold of special design, fitted with large stricture free jets which effectively strip the food soil from all types of ware, inside and out, as it passes through the spray pattern. The food soil drops onto flat perforated stainless steel screens that cover the tank. The screens are held in an inclined position, which, coupled with the pump action and the final rinse waters feed back, automatically moves the food soil to a scrap catchment, which is mounted outside the tank. A specially designed pump with a 1 HP motor distributes 185 gallons of water over the ware every minute. The pump is integral with the motor, has a stainless steel impeller, packless seal, with stainless steel metal parts and ceramic sealing seat and an extended stainless steel motor shaft, which assures perfect alignment and quiet operation. The screens, manifolds and curtains are easily removed through the door without the use of tools. Power Wash: STERO's unique stainless steel manifolds are center-fed, fitted with stricture free jets with directional vanes and can be easily removed without tools. Center-fed manifolds distribute an even flow of wash water over the entire perimeter of the rack, ensuring consistent results. The SCT corner series distributes 225 GPM of detergent water pumped over the ware by a 2 HP motor and pump assembly. STERO SC Modular Conveyor Series: Provides flexibility and maximum warewashing power in a minimum amount of space. The SC Series is the only warewashing system that can be designed around a problem dishroom. With modular sections, each power scrapper, wash, rinse, high temperature or chemical sanitizing final rinse section may be designed in either a straight through or 90° section. These may be assembled with other sections to complete a problem solving warewashing system of your choice. SC Series: The only true corner dishwashing system, eliminating the need for side-loaders, power loaders and unloaders and rack advancers. It transforms these non-washing transition pieces into actual washing areas. Both soiled and clean dish table space can be gained because STERO's large volume conveyor utilizes previously unused space.

STanDaRD FEaTURES Design: A fully automatic circular warewashing system with a complete customized scullery, integrating a scrapping and loading area for soiled ware, racking, warewashing and sorting of clean ware. The table and machine have a conveying system that is capable of receiving and transporting all types of dishware inherent to the food service industry. The entire tank area is covered with stainless steel per forated strainer pans which are easily removable by hand for cleaning. All internal construction is stainless steel. The machine is NSF standard No. 3 approved and conforms to UL 921. Conveyor Table: The conveyor table is constructed from 12 gauge, type 300 series No. 4 mill finish stainless steel. The table is 24" front to back and has the front edge turned up 3" and the back edge turned up 13". The scrapper is also equipped with a cold water aquastat that control the water temperature in the scrapper tank so that food proteins are not baked onto the ware due to excessive heat. Mandatory Power Wash: Stainless steel center fed manifolds above and below the ware with stricture free jets and directional vanes are interchangeable, upper and lower and from tank to tank and easily removed without tools. Stainless steel end caps are removable without tools. A 2 HP, 1750 rpm pump and motor is capable of spraying 225 GPM over the ware. Manifold water restrictors are provided so that water pressure from top to bottom can be adjusted to the type of ware being washed. The motor has an extended stainless steel shaft with packless ceramic seal. The pump has easily removable inspection plates, front and end, and is self-draining. Power Rinse: Stainless steel center fed manifolds above and below the ware with stricture free jets and directional vanes are interchangeable, upper and lower and from tank to tank and easily removed without tools. The expended final rinse water is piped directly to the power scrapper tank for reuse, by-passing the power wash tank completely. This ensures that the wash detergent is not diluted. The final rinse is isolated from the preceding stage which prevents splash over and assures a proper rinse. The final rinse is contained in a 24" long 16 gauge stainless steel hood. Clean-up Hose: The warewashing system is provided with a quick-coupling hose bib, plumbed in the 140° water supply line complete with a 25 hose and nozzle to facilitate cleaning procedures on the warewasher and general clean-up in the scullery area. Control Panel: The warewashing system is equipped with a hinged front opening splash-proof panel, located under the unload shelf, top mounted or remote mounted as specified. The control panel and machine has the approval of the Underwriters Laboratory, as well as the California Industrial Accident Commission Safety Regulation, electrical division. All internal wiring of the machine is complete in waterproof conduit and fittings and terminates in the enclosure to a make-up box. Mounted Circuit Breakers: The warewashing system is equipped with mounted circuit breakers housed in a stainless steel panel in conjunction with the main control

The table has watertight butt joints, located where necessary to allow for the easy movement and assembly of the system. The system does not require any field welding to install. The table is supported by stainless steel leg sets with one leg forward and one leg back, and with a cross brace for strength and rigidity. Each leg has adjustable stainless steel bullet feet. The sets are mounted to the table on approximately 3 foot centers. The table has formed stainless steel conveyor tracks mounted to the front and back of the turned up edges and at a height to keep the conveyor from touching the table. The table is pitched from the clean portion to the soiled area for water drainage. Conveyor: The conveyor consists of a series of stainless steel 20" square dollies each of which has four single rack stainless steel ball bearing wheels. These wheels roll in the aforementioned tracks and hold the dollies up off of the table. The dollies are interconnected, and when moving from a continuous conveyor, traveling in the direction shown on the plan. Each dolly is equipped with a plastic all-purpose rack which receives most types of soiled ware and holds it in the position for washing. Every third dolly is equipped with a wiper which conveys water and food soil that drops onto the table, to the scrapping tank for removal. The conveyor system is powered by a ½ HP variable speed drive. The drive assembly rotates a stainless steel chain which, in turn, engages three dollies simultaneously, providing the propelling force. Because the conveyor system rolls on ball bearing wheels, it can be moved forward manually in case a jam occurs. The entire drive assembly is mounted in the table backsplash, outside of the machine proper and away from any possible contamination by food soil. The conveyor has start-stop switch located at stations convenient to the operators. The conveyor can be stopped or started without turning off the machine itself. Power Scrapper: The power scrapping section is mounted in the curved 90° quadrant as indicated on the plan. Stainless steel center fed manifolds above and below the ware with stricture free jets and directional vanes are interchangeable, upper and lower and from tank to tank and easily removed without tools. A 2 HP, 1750 rpm pump and motor is capable of spraying 225 GPM of pre-wash water over the ware. Manifold water restrictors are provided so that water pressure from top to bottom can be adjusted to the type of ware being washed. The motor has an easily removable front inspection plate and is self-draining. The food soil drops onto stainless steel strainer pans which cover the tank. The screens are held in an inclined position, which, coupled with the water action, final rinse feedback and scrapping trough, automatically moves the food soil to the waste system mounted outside the tank. A 12" wide, 12 gauge stainless steel scrap trough, mounted outboard of the conveyor table, is part of the scrapping system. It is in the shape and length as shown on the plan. The trough has a water inlet at the head which is controlled manually by the operator. The heavy food soil is deposited in the trough and is flushed directly to the waste disposal system. The food soil deposited in the trough, and the soil which is removed by the scrapping

panel. Each motor, including the disposer, are protected by an individual circuit breaker. One three-wire service is sufficient for connecting the electrical service. This ensures that the warewashing system is wired correctly and that any electrical motor or element failure does not shut the machine down. Vapor Control Hood: A 16 gauge stainless steel vapor control hood with an inspection door and vent collar is furnished as an integral part of this machine and is of the size and shape shown on the drawing. Water Level Control With automatic Fill: Automatically fills each tank and maintains water level by a stainless steel float system on an independent basis. The system will automatically refill the tank in the event of low-water level. Kit 55: A pre-plumbed and installed system that includes a ¾" pressure reducing valve, shock arrestor, a flow pressure gauge and line strainer prior to the solenoid valve. Temperature Gauges: Housed in stainless steel enclosures on top of the machine in areas protected from accidental damage and facing the operators for visual check. A temperature gauge is provided for each scrapping, washing, rinsing and final rinse section of the machine. Door Safety Switches: Prevent the machine from running if the door is open. If the door is opened during operation, the machine will automatically shut-off. Stainless Steel Front Enclosure Panels: The machine is completely enclosed down to base level of the frame with stainless steel removable panels. Inspection Doors: Provided in the front of the machine. Drain Valves and Overflow Control: Stainless steel/nickel alloy poppet-type drain valve. Stainless steel/nickel seats and castings assure a leak-free seal. Each drain valve is provided with a clean-out for removal of accumulated waste. The drain valves are either hand or foot operated externally at the front of the machine and the control shaft is spring loaded to prevent damage to the valve. Common Drain and Plumbing: A common 2" copper drain will connect the discharge from all tanks. All plumbing fixtures are brass, copper and stainless steel. Electrical Features: All motors are factory wired in waterproof conduit and fittings to a common connection point. All wiring is numbered and color coded. Required Tank Heating: NSF requires that water in all power wash tanks and power rinse tanks be maintained at specific temperatures. STERO offers four types of heating equipment to meet this standard. Please specify which option best suits your job conditions. THE TanK HEaTInG OPTIOnS aRE: Electric: Provided by four (4) 5 kW (20 kW total) electric immersion heaters in the wash tank and four (4) 5 kW (20 kW total) in the rinse tank, thermostatically

controlled with stainless steel float-type low-water cut-off. Immersion heaters are mounted in the bottom of the tank. Gas: STERO has developed another first for the industry. A gas fired, infrared tank heating system that will heat the water to the correct temperature and maintain it during operations. Burners, constructed of woven ceramic fiber, are thermostatically controlled and feature a manual off-on valve. The tank is enhanced by Stero's positive low water protection system which safeguards the unit in the event of a low-water condition. Steam Injector: Thermostatically controlled stainless steel steam injectors with silencers are mounted in the tank. A thermostat controls the water temperature. Steam Coil: Thermostatically controlled stainless steel steam coil, mounted in the tank and designed to return steam to the generator. A steam trap is mounted on the steam return line. aVaILaBLE OPTIOnS Slanted Rack Shelf: The unit is constructed of 14 gauge, stainless steel. The shelf is mounted on stainless steel standards over the load end of the warewashing system. The shelf is adjustable for angle and up and down. Overshelf: A flat 14 gauge stainless steel overshelf 16" front to back with a 6" back-splash. This unit is mounted over the conveyor on stainless steel uprights and suitably braced, adjustable up and down and front and back. Unload Shelf: A Sani-Tuff unload shelf, ½" thick by 13" wide is provided. This shelf is supported in a 12 gauge stainless steel frame mounted to the conveyor table with 3/8" stainless steel flat bar brackets. The Sani-Tuff is reversible or replaceable without the use of tools. Rotating Rack Shelf: This unit mounts on the end of the load section. The slanted shelves, each with one rack capacity, is mounted two (2) high on a special rotation shaft. Each shelf is easily accessible to the operator for loading. The shelves are constructed of 14 gauge stainless steel and the tube is 1/8" thick × 1 5/8" diameter stainless steel tubing. Combination Hand/Soak Sink: This unit is constructed from 14 gauge stainless steel and mounted to the conveyor table with 1/2" × 2" stainless steel brackets. The sink is 13" × 8" × 12" deep and has all 5/8" coved corners and is equipped with a lever action drain. A gooseneck faucet is provided with the unit. Soak Sink: This unit is constructed of 14 gauge stainless steel and is 24" × 24" × 13" deep with a die rolled front edge. The backsplash is 8" high and tapers to the front on both sides. The sink is supported on stainless steel legs in front and stainless steel brackets on the back which securely mount it to the conveyor table. The sink is equipped with a pre-rinse faucet and a lever waste with overflow.

Continued Booster Heaters: Mounted under the unload section near the final rinse. Electric: 45 kW booster for 40° rise is recommended. Factory mounting, plumbing and wiring of the booster is included. Steam: SWB-320 booster for 40° rise is recommended. Factory mounting, plumbing and wiring of the booster is included. Cantilevered Tray Rests: The tray rests are 14 gauge stainless steel bar with special brackets for mounting on the edge of the waste trough without tools. The tray rests are capable of holding large size banquet trays for unloading. Tray Washing Rack: The tray washing rack sets on the dolly in lieu of an all purpose rack. The tray washing rack shall hold 4 large size oval banquet trays or 18"× 26" sheet pans in position for washing. The rack is easily removed without tools. Disposer: Included with the warewashing system. The disposer includes the disposer unit and controls. The wiring and water supply system is provided by STERO. The welding of the adaptor flange to the hopper is provided by STERO. Disposer Hopper Box: A stainless steel hopper with cover is configured to mount to the scrap trough. The adapter ring to fit the disposer, is welded to the hopper box bottom. Hommel Pot: The Hommel Pot is constructed of 16 gauge stainless steel sides and a 12 gauge stainless steel bottom with a 3/16" × 1" stainless steel reinforcement lip. The Hommel Pot bolts up to the scrapping trough and have a capacity of 13 gallons. The Hommel Pot is equipped with a 16 gauge perforated stainless steel straining scrap basket. Recirculated Hommel Pot: The recirculated Hommel Pot is constructed of 16 gauge stainless steel sides and a 12 gauge stainless steel bottom with a 3/16" × 1" stainless steel reinforced lip. The Hommel Pot bolts up to the scrapping trough and has a capacity of 13 gallons and includes a 1/3 HP motor and pump recirculating the water. The Hommel Pot is equipped with a 16 gauge perforated stainless steel scrap basket. Outboard Scrap Catchment: The Outboard Scrap Catchment is constructed of 16 gauge stainless steel and is integral to the machine. The food soil drops onto stainless steel strainer pans covering the scrapper tank. The screens are held in an inclined position, which, coupled with the water action and final rinse water feedback, automatically moves the food soil to the scrap catchment mounted outside the tank. The Outboard Scrap Catchment can be removed for emptying while the machine is operating. Blower Dryer: The 2 HP blower drying unit (steam or electric) is top mounted and enclosed in stainless steel side panels. Drying Tunnel: A stainless steel drying tunnel (36" and 48" length are typical) is integral with the hood covering the main section of the machine. The drying tunnel keeps the dishroom help from removing ware before reaching the unloading section and also creates a natural airflow over the ware to aid in the drying process. Top Mounted Controls: The control cabinet is mounted on top of the machine. Remote Cabinet: The control cabinet is made separate from the machine for remote mounting. Raised Hood: Increases the height of the hood so that very large items can be washed in the machine.

STERO's Tray Accumulator Conveyor offers true accumulation, providing an improved and highly efficient alternative to outmoded conveyor systems. Trays, loaded by the patron and transported to the dishroom, are then unloaded by the dishmachine operator. If trays cannot be unloaded immediately, they continue around the system and return to the operator. No worry about trays backing up as the Conveyor may remain on during peak hours when the load is greatest. Efficient utilization of space distinguishes the STERO STAC from flat belt conveyors. Flat belt conveyor capacity can only be increased by increasing the length of the belt itself. The STERO system, with its tiered carrier, holds five trays at a time. This equals over 7 times the capacity of a similar length flat belt. This system utilizes the "tried and true" components of the STERO Systematic which have proven their reliability for many years.

STANDARD FEATURES Construction: Heavy duty 12 gauge stainless steel frame. Bolt together construction for ease of assembly. Supported by stainless steel leg sets with adjustable stainless steel bullet feet. Design: May be constructed in oval or triangle shape. Any length­ from a minimum oval of 9 8" long to as long as your application requires­or your imagination desires. Tray Carriers: Unit consists of individual carriers which have a five tray capacity. Carriers are interconnected to complete a continuous circle of transportation. Carriers are each supported on four stainless steel ball bearing wheels which roll in a formed stainless steel track. Carriers are on approximately 20" centers and are interconnected. Drive: A single ½ HP 115 volt, variable speed (adjustable) drive unit drives a stainless steel chain which contacts drive pins on each carrier. This propels the entire circle of carriers. Capacity: Tray capacities vary with the size and shape of the system. The following are typical examples:

n 9 8" oval unit: 55 tray capacity n 15 8" oval unit: 85 tray capacity n 20 8" oval unit: 115 tray capacity n 25 8" oval unit: 145 tray capacity

It takes a heavy duty washer to tackle the challenge of cleaning pots and pans. STERO's U-31A is a single tank, one rack, pot and pan washer, fully automatic with adjustable wash and rinse cycles. The hood and tank are made from heavy gauge, fully welded stainless steel for durability and longevity. The U-31A uses 24" × 28" stainless steel racks which enable a large variety of food preparation utensils to be processed through the machine. This workhorse will tackle the toughest cleaning job with ease. For larger loads and high capacity production needs, STERO offers a rackless conveyor, Flight-Type Utensil Washer, the STBUW model. U-31A: STERO's heavy duty single tank pot, pan and utensil washer provides fully automatic and adjustable operation.

STANDARD FEATURES Design: Single tank, two-door push through type with adjustable wash and rinse timers, utilizing 24" × 28" racks. Construction: Tank and hood are formed from 16 gauge, type 300 series no. 4 mill finish stainless steel, all fully welded. The frame is heavy stainless steel with 8" stainless steel adjustable feet. The internal piping, fittings, risers, manifolds, etc., are stainless steel. Power Wash: 230 gPM of detergent water is pumped over the utensils through the STERO engineered wash principle, which utilizes revolving upper and lower wash arms. These have been designed to create an effective, powerful pattern which causes detergent water to reach all parts of the utensils from every angle, assuring complete coverage and washing. Specially designed spray deflectors on the revolving wash arms achieve the unique wash pattern. Rinse Pattern: Achieved by seven fixed perimeter sprayers above the utensils and by lower stainless steel revolving rinse arms with stainless steel jets, all mounted in the perimeter of the rack. As with the wash pattern, utensils are thoroughly rinsed and sanitized. Controls: The controls, contactors, timers, etc. are mounted in a splash proof, stainless steel control box, securely fastened to the frame of the machine at a convenient working height. The controls include two adjustable timers. One timer regulates the wash cycle and is adjustable from two minutes to five minutes. The other timer regulates the rinse cycle and is adjustable from 15 to 30 seconds. A push button start switch and a tank heat switch (illuminated when on) are provided. in addition there is a selector switch allowing the machine to be operated automatically or manually, at the operator's discretion. All controls and the entire electrical system are factory inter-wired and in waterproof conduit. Door Safety Switch: if the door is opened before the cycle is completed, this switch automatically stops the machine. Stainless Steel Front Enclosure Panel: Protects motor and controls from moisture. Rack Complement: Total of 4 stainless steel racks to handle various utensil washing needs: 1 Basket Rack (for cooking utensils, etc.); 1 general Utility Rack (for large mixing bowls and cook pots); 1 Counter Pan Rack; 1 Bun Pan Rack (for bun pans and cooking sheets.) All racks are 24" × 28". Stainless Steel Frame and Legs: Stainless steel feet standard. Line Strainers: Provided on all supply lines required on the machine. Provides clean out to protect plumbing accessories. Electrical Features: Power wash motor is 3 HP, extra heavy duty, 1745 rpm, with sealed bearing and built-in thermal overload protection. Standard Electrical Specifications Available: 208-60-3, 220/240-60-3, 460/480-60-3. Magnetic motor starter with low voltage protection is inter-wired in control panel. Motor is factory wired in waterproof conduit and fitting to control panel. Control panel is mounted on right side of machine for easy "no stretch" access. Adjustable wash and rinse timers are enclosed behind hinged and fastened switch panel. Panel is fitted with oil tight switches and push buttons with pilot lights.
