Wacky Mac Nicoise

Wacky Chicken Salad

1 package (12 oz.) Wacky Mac 11/2 cups cooked chicken, cubed 1 medium carrot, shredded 1/2 medium red onion, sliced thin

cup celery, sliced thin cup fresh parsley, chopped 1 cup (8 oz.) honey mustard salad dressing

Cook Wacky Mac according to package directions; drain and rinse under cold water. In large bowl, combine Wacky Mac and remaining ingredients; toss to mix. Cover and chill thoroughly. Stir gently before serving. Garnish as desired. Makes 6-8 servings.

Southwestern Wacky Mac Salad

1 package (12 oz.) Wacky Mac 1 can (about 15 oz.) red kidney beans, drained and rinsed 1 can (7 oz.) corn kernels, drained 1 red or green bell pepper, chopped 1/ 2 cup sliced black olives 1/ 2 cup cherry tomatoes, halved 1 cup (4 oz.) shredded cheddar cheese 2 green onions, chopped 1 cup (8 oz.) ranch salad dressing 1 tablespoon hot pepper sauce (or more to taste) 1 teaspoon chili powder

Wacky Mac Veggie Shapes

Wacky Mac Nicoise

1 package (12 oz.) Wacky Mac 1 cup Italian red wine vinaigrette dressing, divided 3 eggs, hard-cooked 1 cup frozen cut green beans, thawed 1 cup small cherry tomatoes, rinsed, stemmed and sliced 2 cans (6 oz.) tuna packed in water, drained* 1/4 cup pitted black olives (preferably oil or brine-cured) Cook Wacky Mac according to package directions; drain and rinse with cold water. Reserve 1/4 cup salad dressing. Toss Wacky Mac and remaining 3/4 cup dressing in large serving bowl until well blended. Peel eggs and cut into wedges. Arrange beans, tomatoes, tuna, olives and eggs over pasta. Drizzle with reserved salad dressing. Makes 4-6 servings. *Chicken or salmon may be substituted for the tuna.

Cook Wacky Mac according to package directions; drain and rinse under cold water. Combine Wacky Mac, beans, corn, bell pepper, olives, tomatoes, cheese and green onions in large bowl. Combine salad dressing, hot pepper sauce and chili powder; mix well. Pour over Wacky Mac; toss to coat. Chill at least 1 hour before serving. Makes 6-8 servings.

Wacky Crab Salad

Wacky Mac with Artichokes

1 package (12 oz.) Wacky Mac 1 package (9 oz.) frozen artichoke hearts 1/4 cup olive oil, divided 1/ 2 cup bread crumbs 1/ 2 cup chopped sun-dried tomatoes (packed in oil) 2 cloves garlic, minced 1 cup broccoli florettes 1 cup sliced mushrooms 1 cup chicken broth 1/4 cup chopped fresh Italian parsley 1/8 teaspoon freshly ground black pepper 1/4 cup grated Parmesan cheese

Wacky Crab Salad

1 package (12 oz.) Wacky Mac 2 (8 oz.) packages chunk crabmeat 1 cup chopped green pepper 6 green onions, sliced thinly on an angle 1/ 2 cup salad dressing or mayonnaise cup Thousand Island dressing Salt and pepper to taste 1 cup shredded lettuce 1/4 cup sliced almonds

Cook Wacky Mac according to package directions; drain. Meanwhile, cook artichokes according to package directions. Heat 1 tablespoon oil in medium skillet over medium heat. Add bread crumbs; cook and stir about 2 minutes or until lightly browned. Remove from skillet and set aside. Heat remaining 3 tablespoons oil in same skillet. Add sun-dried tomatoes and garlic; cook and stir 2 minutes. Add broccoli and mushrooms; cook and stir 5 minutes. Stir in chicken broth, artichokes and parsley; cook and stir 3 minutes or until heated through. Combine Wacky Mac, artichoke mixture, parsley, pepper and reserved bread crumbs in large bowl; toss to coat. Serve immediately with Parmesan. Makes 4-6 servings.

Prepare Wacky Mac according to package directions; rinse with cool water. Combine salad dressing and Thousand Island dressing; set aside. In large bowl, toss together drained Wacky Mac, green pepper, green onions, dressing mixture and salt and pepper (optional). Gently fold in shredded lettuce and crabmeat. Top with sliced almonds. Makes 4-6 servings.

Wacky Mac with Spinach & Asiago

Wacky Mac with Spinach & Asiago

1 package (12 oz.) Wacky Mac 2 cloves garlic, minced 1/4 cup extra-virgin olive oil 1 package (10 oz.) fresh spinach, 1/4 cup grated Parmesan cheese washed, stemmed and leaves torn 8 ounces bacon, cooked and crumbled Freshly ground black pepper 4 ounces Asiago cheese, cut into Salt small pieces 3/4 cup sun-dried tomato strips (packed in oil) Cook Wacky Mac according to package directions; drain. Meanwhile, combine spinach, half of bacon, Asiago, sun-dried tomatoes and garlic in large bowl; mix well. Add hot Wacky Mac to bowl; drizzle with oil and toss until all ingredients are well blended. Gently stir in Parmesan and remaining bacon; salt and pepper to taste. Makes 6-8 servings.

Wacky Chicken-Asparagus Bake

1 package (12 oz.) Wacky Mac 1 tablespoon vegetable or olive oil 1 red bell pepper, chopped 1 onion, chopped 1 large clove garlic, minced 11/ 2 cups ricotta cheese 1 can (10 3/4 oz.) condensed cream of asparagus soup 2 cups (8 oz.) shredded cheddar or Colby-Jack cheese, divided 2 eggs, lightly beaten 1/4 teaspoon ground black pepper 2 medium chicken breasts, grilled and sliced 1 package (10 oz.) frozen asparagus cuts, thawed

Wacky Mac Veggie Curls

Wacky Pizza Casserole

1 package (12 oz.) Wacky Mac 2 cups (8 oz.) shredded 1 package (1 pound) Italian-style cheddar cheese roll sausage 6 ounces sliced pepperoni 2 cans (14 oz.) pizza sauce 2 cups (8 oz.) shredded mozzarella cheese Preheat oven to 350ºF. Cook Wacky Mac according to package directions; drain. Meanwhile, crumble and cook sausage over medium heat until browned. Drain on paper towels. Layer half of Wacky Mac in lightly greased 13x9-inch baking dish. Top with half of sausage, half of pasta sauce, half of cheeses and half of pepperoni. Repeat layers, ending with pepperoni. Bake 35-40 minutes or until heated through and lightly browned on top. Makes 8 servings.

Preheat oven to 350oF. Cook Wacky Mac according to package directions; drain. Meanwhile, heat oil in medium skillet over medium heat. Add bell pepper, onion and garlic; cook and stir 5 minutes. Combine ricotta cheese, soup, 1 cup cheddar cheese, eggs and black pepper in large bowl; mix well. Stir in chicken, asparagus, bell pepper mixture and Wacky Mac. Spread in large, greased casserole dish; top with remaining 1 cup cheese. Bake 35-40 minutes or until center is set and cheese is bubbly and lightly browned. Let stand 5 minutes before serving. Makes 6-8 servings.

Wacky Taco Casserole

1 package (12 oz.) Wacky Mac 1 pound ground beef 1/ 2 cup diced red or green bell pepper 2 cloves garlic, minced 1 package (11/4 oz.) taco seasoning mix 1 teaspoon dried oregano leaves 1 can (15 oz.) tomato sauce 3/4 cup whole kernel corn 1/4 cup water 2 cups (8 oz.) shredded taco-flavored cheese or Colby-Jack cheese, divided 1/ 2 cup sour cream

Three-Cheese Baked Wacky Mac

1/4 cup chopped fresh parsley (optional) 1 package (12 oz.) Wacky Mac 1 package (10 oz.) frozen spinach 1 jar (about 26 oz.) favorite 1 container (15 oz.) ricotta cheese pasta sauce 1/ 2 cup grated Parmesan cheese 2 cups (8 oz.) shredded 2 eggs, beaten mozzarella cheese

Preheat oven to 350ºF. Cook Wacky Mac according to package directions; drain. Thaw, drain and chop spinach. Combine spinach, ricotta cheese, Parmesan cheese, eggs and parsley in medium bowl. Combine Wacky Mac and pasta sauce in large bowl; toss to coat. Spread half of Wacky Mac in lightly greased 13x9-inch baking dish. Top with ricotta cheese mixture and 1 cup mozzarella, then remaining Wacky Mac and remaining 1 cup mozzarella. Bake 30-35 minutes or until heated through. Makes 8 servings.

Preheat oven to 350oF. Cook Wacky Mac according to package directions; drain. Cook ground beef in large nonstick skillet over medium heat until browned; drain. Add bell pepper, garlic, taco seasoning and oregano to skillet; cook and stir 3 minutes. Stir in tomato sauce, corn and water; bring to a boil and simmer about 5 minutes. Combine Wacky Mac, 1 cup cheese and sour cream; mix until well blended. Spoon into lightly greased 13x9-inch baking dish. Top with tomato sauce mixture and sprinkle with remaining 1 cup cheese. Bake 30-40 minutes or until heated through and lightly browned on top. Makes 8 servings.

Wacky Mac Veggie Spirals

Wacky Greek Salad

1 package (12 oz.) Wacky Mac 2 ripe tomatoes, chopped 1 cucumber, peeled, quartered lengthwise and cut into 1/2-inch pieces 1 green or red bell pepper, diced 1 small red onion, chopped 1/ 2 cup chopped pitted olives (preferably Kalamata or other brine-cured olives) 8 ounces feta cheese, crumbled 1/ 2 cup extra-virgin olive oil 1/ 4 cup fresh lemon juice 2 cloves garlic, minced 1 teaspoon dried oregano leaves Freshly ground black pepper Cook Wacky Mac according to package directions; drain and rinse under cold water. Combine tomatoes, cucumber, bell pepper, onion, feta, olives, olive oil, lemon juice, garlic and oregano in large bowl; mix well. Add Wacky Mac; toss to coat. Add pepper to taste. Makes 6-8 servings.

1 package (12 oz.) Wacky Mac 2 cans (6 oz. each) tuna packed in water, drained 8 ounces snow peas, cut into julienne strips 2 carrots, cut into julienne strips 1 zucchini, cut into julienne strips 1 yellow squash, cut into julienne strips 1 red bell pepper, cut into julienne strips 1 small red onion, cut in half and thinly sliced 1/4 teaspoon ground pepper 1 cup honey Dijon salad dressing Cook Wacky Mac according to package directions; drain and rinse under cold water. Combine Wacky Mac, tuna and vegetables in large bowl. Add pepper and salad dressing; toss to coat. Chill before serving. Makes 6 servings.

Three Bean Wacky Sweet Salad

Southern Italian Wacky Mac

1 package (12 oz.) Wacky Mac 1 can (14 oz.) Italian-style diced tomatoes, undrained 1 jar (6 oz.) marinated artichoke hearts, chopped, undrained 1/ 2 small red onion, cut in half and thinly sliced 1/ 2 cup pitted black olives 1/ 2 cup cubed provolone cheese

cup grated Parmesan cheese cup chopped fresh basil or 1 tablespoon dried basil leaves 2 tablespoons chopped fresh oregano or 2 teaspoons dried oregano leaves 3 tablespoons red wine vinegar 1/ 2 teaspoon salt 1/4 teaspoon red pepper flakes

Three Bean Wacky Sweet Salad

1 package (12 oz.) Wacky Mac 1 can (14.5 oz.) green beans, drained; or 11/ 2 cups fresh beans, cut into pieces 1 can (14.5 oz.) wax beans, drained; or 11/ 2 cups fresh beans, cut into pieces 1 can (14.5 oz.) kidney beans, drained 1 cup chopped sweet onion 3 /4 cup cider vinegar 1/ 2 cup salad oil 2/3 cup sugar 11/ 2 cups halved cherry tomatoes Salt and pepper to taste Prepare Wacky Mac according to package directions; rinse with cool water. Meanwhile, combine drained beans and chopped onion in large bowl. In separate small bowl, combine cider vinegar and salad oil; slowly add in sugar to dissolve. Add drained Wacky Mac and vinegar mixture to beans. Add tomatoes and salt and pepper (optional); gently toss to combine. Makes 6 servings.

Cook Wacky Mac according to package directions; drain and rinse under cold water. Combine Wacky Mac, tomatoes with liquid, artichokes with marinade, onion, olives, provolone and Parmesan, basil, oregano, vinegar, salt and red pepper flakes in large bowl; toss to coat. Refrigerate at least 30 minutes before serving to allow flavors to blend. Makes 6-8 servings.

Wacky Chicken & Roasted Pepper Salad

1 package (12 oz.) Wacky Mac 2 cups chopped cooked chicken* 1 jar (7 oz.) roasted red peppers, drained and cut into strips 1 cup zucchini, sliced 3/4 cup (6 oz.) Balsamic vinaigrette dressing 1 teaspoon dried oregano Salt and freshly ground black pepper Cook Wacky Mac according to package directions; drain and rinse under cold water. Combine Wacky Mac, chicken, roasted peppers and zucchini in large bowl. Blend vinaigrette dressing and oregano in small bowl; add to Wacky Mac and toss to coat. Add salt and pepper to taste. Makes 6-8 servings. *For best flavor and convenience, purchase a rotisserie chicken from the supermarket and cut the meat into small pieces or strips. Leftover baked, broiled or grilled chicken can also be used.
